ABSTRACT

Introduction: Food handlers play important role in food safety and transmission of foodborne desease. According to WHO, 70% of diarhea occured in developing country is mostly caused by contaminated food. A number of study released that the incidence of foodborne illness is caused by non-standarized food processing practices. Objective: The research aimed to describe the level of knowledge, hygiene and sanitation practices of food handlers in orphanages, Kupang City. Methods: This research was conducted in 13 orphanages in Kupang City, in which 26
food food handlers were involved as respondent. The data was collected through interview and observation. Then the data was descriptively analysed. Results: the knowledge of respondent about personal hygiene was 84,6% good, the
knowledge of food preparation tecniques was 92,3% good, the knowledge of sanitation of food preparation area was 65,4% good and 34,6% adequate. The knowledge of equipment sanitation was 96,2% good. The personal hygene practices was categorized 77% adequtae, food preparation tecniques was classified 96,2% good, the sanitation of
food preparation area was categorized 53,8% less, equipment sanitation was classified 88,5% good. Conclusions and recomendations: Compared to level of knowledge, low level of hygiene and sanitation practices was reported in this study. It needs the increase of awareness in the pratices of hygene sanitation principles of food handlers in the orphanage. The avability of sanitation support facilities requires attention in order to provide hygiene
and sanitation pratices to meet the food quality as health standard.
